BLEND IT: TEMPEH SMOOTHIE BOWL

 

SMOOTHIE BOWL

  • 1 cup frozen mixed berries
  • 1 small ripe banana (sliced)
  • 3-6 Tbsp plant milk (plus more as needed)
  • 1 chunk of raw tempeh (20g-50g)

 

TOPPINGS

  • 1 Tbsp shredded unsweetened coconut 
  • 1 Tbsp goji berries
  • 1 Tbsp coconut sugar powder
  • 1 POW BAR energy bar cubed
  • Granola (optional)
  • Fruit & Seeds (optional)

 

STEPS

  • Add frozen berries and banana to a blender and blend on low until small bits remain
  • Add a bit of plant milk and tempeh and blend on low again, scraping down sides as needed, until the mixture reaches a thick creamy consistency
  • Scoop into serving bowls and top with desired toppings such as chia seeds, hemp powder, coconut, fruit, granola, or nut butter.
